Try out this simple twist on a penna pasta stir-fry!

  • 2 teaspoons cornstarch
  • 3 tablespoons light soy sauce
  • 3 tablespoons rice vinegar
  • 1 cup low-fat, low-sodium chicken broth
  • 2 teaspoons canola oil
  • 2 large carrots, thinly sliced
  • 3 garlic cloves, minced
  • 1 cup snow peas
  • 1 cup asparagus spears cut in 1 to 2-inch pieces
  • 1/4 teaspoon red pepper flakes
  • 6 cups cooked penne pasta
  • 1 teaspoon ground pepper

 

Directions

  1. Combine the first four ingredients and set aside.
  2. Heat oil in large skillet or wok. Add carrot slices and garlic. Stir-fry 5 minutes.
  3. Add snow peas and asparagus, lower heat to medium low, and add red pepper flakes and sauce. Add pasta to skillet, bring to a boil and cook for 2 minutes.
  4. Season with pepper.
