This recipe is the perfect mixture of vegetables to make your new favorite soup. 

 

Ingredients

  • 1 cup chopped onion

  • 1 cup baby carrots

  • 3/4 cup celery, sliced

  • 1 cup frozen corn

  • 1/2 teaspoon minced garlic

  • 3 tablespoons olive oil

     

  • 6 cups lower sodium, fat free beef broth or water

  • 1 (28 ounce) can diced tomatoes

  • 1 (8 ounce) can tomato sauce

     

  • 1/2 teaspoon thyme

  • 1/2 teaspoon rosemary

  • 1/4 teaspoon marjoram

  • 1/4 teaspoon black pepper

  • 3 cups chopped green cabbage

  • 1 cup frozen cut green beans or Italian beans

  • 2 cups cooked macaroni

Directions

  1. Place all ingredients except pasta in a large soup kettle. Bring to a boil. Reduce heat to a simmer. Simmer for 1 to 1-1/2 hours or until vegetables are tender.
  2. Add the macaroni and warm thoroughly.
